This will be another hybrid meeting format at the Knox County Health Department Community Room or via Zoom on Thursday\, April 20th from 3:00a-4:30p. Light refreshments provided. Hope to see you there for this exciting presentation! \nBio: Jane V. White\, PhD\, RD\, FADA is a Professor Emerita\, Professor\, Department of Family Medicine\, University of Tennessee College of Medicine Memphis\, University of Tennessee Graduate School of Medicine Knoxville\, 2012-present. She is a graduate of St. Mary’s Dominican College and was recipient of its Adele Stewart Home Economics Award in1968. She completed her Dietetic Internship at the University of Iowa Hospital and Clinics in 1968 was awarded its Outstanding Alumni Award in 1994. Jane was awarded an Allied Health Traineeship by the NIH (1972-75) completing her Doctorate in Nutrition at the University of Tennessee in 1975. She received the Centennial Leadership Award of the College of Human Ecology\, University of Tennessee in 1996. Jane is a Past President of the Knoxville District Dietetic Association\, and recipient of its Outstanding Dietitian Award in 1979-80\, and of its Leadership Recognition Award in 1994. She is recipient of the Tennessee Dietetic Association’s Special Award for Excellence in Leadership in 1994. Jane is a Past Speaker of the ADA House of Delegates (1992-93)\, President of the American Dietetic Association (2000-2001). She received the ADA Medallion Award in 1996\, was the Karen Wright Memorial Lecturer for the Alabama Dietetic Association Foundation in 2000\, and the Marjorie Hulsizer Copher Memorial Award in 2009. Jane served as ADA Representative to the AMA CPT and HCPAC/RUC Coding Advisory Panels from 2001-2017 and was Chair of the RUC/HCPAC from 2015-2017. Jane was an Assistant Scoutmaster Troop 444\, Boy Scouts of America\, Great Smoky Mountain Council from 1988-2012. She received the Toqua District Award of Merit in 1999 and was awarded the Silver Beaver Medallion in 2000. She was elected by the youth members (the boys themselves) of the Great Smoky Council to The Order of the Arrow and awarded its Vigil Honor in 1994. Jane has provided several hundred invited lectures over the years at multiple professional meetings\, written 17 book chapters and has 49 publications in peer-reviewed journals. She completed her dietetic internship and dual masters degrees at the University of TN\, Knoxville in 2008. She has been a practicing Registered Dietitian for thirteen years and currently works remotely as a Retail Dietitian with Kroger Health for the last five years. Lisa loves the variety of different ways she helps people to live healthier lives as a retail dietitian including Telenutrition visits\, teaching virtual classes\, developing content for Kroger Health and health coaching. This will be an in-person meeting held at the LeConte Conference Room at Thompson Proton Center. After the meeting\, Jennifer has arranged for our group to tour the Thompson Proton Center facilities. You do not want to miss this unique experience! \n  \nBio: Jennifer graduated with her bachelor’s degree from Mississippi State University and completed her dietetic internship at Lenoir-Rhyne University. She has over 8 years of experience in clinical nutrition and has practiced in both the inpatient and outpatient settings. Working in the oncology field has been a dream and passion of hers for many years. Her experience the field includes prior work at UT Cancer Institute and her current position at Thompson Proton Center. However\, she attributes a great deal of her work ethic and diverse knowledge to the 6.5 years she spent practicing in acute care. DESCRIPTION:Please join us as we host Associate Director of UTK Athletics\, Amanda Fernandez\, MS\, RDN\, LDN\, CNS\, LAT\, ATC\, CSCS to speak about “Performance Nutrition” on Wednesday\, October 5th from 2:30p-4:00p via Zoom. We could not be happier to hear her share her expertise on this topic and the latest trends in sports nutrition! \nBio: \nFernandez previously worked at Florida International\, where she pioneered the sports nutrition program for the Panthers. She also was an assistant athletic trainer\, working with all 18 FIU teams. Starting in June of 2018\, Fernandez counseled individual student-athletes\, teams and coaching staffs on optimal nutrition to generate positive performance outcomes. \n  \nThe Pittsburgh\, Pennsylvania\, native also spent time at the University of Miami (Fla.)\, where she worked with both the sports nutrition and athletic training departments. She was a graduate assistant with the Hurricanes from 2014-16\, working closely with the football\, track & field\, cross country\, volleyball and baseball programs. Her contributions included data assessments and application of research findings to benefit student-athletes’ recovery processes. \n  \nFernandez graduated from Duquesne with a degree in Athletic Training. \n  \nShe is a Registered Dietitian Nutritionist\, a Certified Nutrition Specialist and a Registered Dietitian. DESCRIPTION:Please join us on Thursday\, September 22nd from 3-4:30pm EST as we host: \n  \nDr. Melissa Gutschall\, PhD\, RDN\, LDN\, FAND and Dr. Kyle Thompson\, DCN\, RDN\, LDN\, CNSC from Appalachian State University. \n  \nDr. Gutschall Bio: \nDr. Gutschall is a Professor in Nutrition and Foods and Director of Graduate Programs in Nutrition at Appalachian State University. She has taught nutrition for 15 years at the undergraduate and graduate levels\, served as the Director of the Didactic Program in Dietetics for 5 years\, published a companion textbook for use with the introductory nutrition course\, and serves as a Faculty Internship Coordinator for senior dietetics students. Dr. Gutschall received the 2012 Inaugural College of Health Sciences Outstanding Teaching Award\, the 2016 Beaver College of Health Sciences Research Award\, and the 2020 Cratis D. Williams Graduate School 100 Scholars Award. She was selected as the Outstanding Dietetics Educator for 2014 by the North Carolina Dietetics Association\, for the Chancellor’s Inaugural Class of the Academic Leadership Development Program in 2015\, and for the UNC-BRIDGES Academic Leadership Program for Women in 2021. Dr. Gutschall has been a registered dietitian for 20 years\, and she continues to practice clinically on an interdisciplinary team providing care for children with special needs in the Appalachian Region. She has served with the Academy of Nutrition and Dietetics Evidence Analysis Library and Simulation Task Force\, and currently serves on the NCAND board; she has earned the status of Fellow of the Academy of Nutrition and Dietetics. Her current research agenda is aimed at using her experience to bridge the gap between food insecurity and chronic illness in the rural population of Watauga County through a community-centered health initiative funded by the Blue Cross Blue Shield Foundation of NC\, in collaboration with the Hunger and Health Coalition and Appalachian Regional Healthcare System. \n  \nDr. Thomopson Bio: \nDr. Thompson is a Registered Dietitian Nutritionist (RDN) and a Board Certified Nutrition Support Clinician (CNSC). Before she began teaching in the Department of Nutrition and Health Care Management at Appalachian State University (ASU)\, she worked in a critical access hospital. Her clinical experiences provided an impetus for her interest in rural health care\, with a focus on the ways rurality impacts the nutrition status of rural patients. \nDr. Thompson’s passion for rural health care grew when she relocated to the beautiful Appalachian Mountains and began participating in rural health research. During her career at ASU\, her accomplishments have included the following: \n\nDirector of Appalachian State University’s Graduate Programs in Public Health Nutrition (Certificate and MS in Nutrition)\nParticipation in research on providing effective nutrition care to rural populations\nParticipation in research focused on public health nutrition\, including food pantry capabilities and operations\nPeer-reviewed publications and other professional writing\, including associate editorship of the 2020 text\, Public Health Nutrition (Springer Publishers)\nPresentation of rural-focused research at national conferences\nTeaching in the Department of Nutrition and Healthcare Management\, including graduate courses in rural health\, life cycle nutrition\, and public health nutrition education\n\nDr. Thompson has strong professional interests in both public health nutrition and clinical nutrition. \nDr. Thompson enjoys facilitating learning opportunities for students within the graduate nutrition program. DESCRIPTION:Please join us on February 3rd as Registered Dietitian Rebecca Ellison shares her experiences with entrepreneurship. Rebecca received her Master of Science in Public Health Nutrition and Master of Public Health from the University of Tennessee. Her graduate-level training had a specialized focus in infant-feeding and maternal and child health and that’s where she fell in love with feeding babies.  \n  \nIn her professional career\, Rebecca has experience counseling families in the areas of nutrition and breastfeeding. She also had the privilege of promoting successful breastfeeding at the community level through health policy and program planning\, implementation and evaluation. In this role Rebecca carried out a variety of community-level activities including planning continuing lactation education seminars for medical professionals\, educating local childcare facilities on the topic of infant feeding\, partnering with local hospital administration and employers to improve breastfeeding related policies and practices\, and designing lactation rooms throughout Knox County.  \n  \nCurrently\, Rebecca is the owner/founder of The Baby Nutritionist\, LLC. DESCRIPTION:In honor of National Diabetes Awareness Month\, Lisa Kocak from the Tennessee Department of Health will be speaking on Diabetes Prevention and Awareness in the Community. \nLisa has a B.S. in Health Education from the State University of New York\, College at Cortland and her Masters of Arts and Social Sciences from the State University of New York\, College at Binghamton.  She started her career as a Certified Medical Assistant in the medical field and went on to pursue her current career in public health.  She has worked at the local public health level and transitioned into the state level of public health.  She worked as a Public Health Educator and Public Information Officer at the Tioga County Health Department in Owego\, New York and a Health Program Specialist at Metro Public Health Department in Nashville.  Lisa is currently a Program Director at the Tennessee Department of Health in the Chronic Disease division.  Kocak also teaches Medical Assisting courses at South College in Tennessee. \n

In 2008\, she began teaching Medical Nutrition Therapy I and II at U of M as an adjunct.  Currently\, Mary Catherine serves as the Tennessee Delegate for the House of Delegates. \n  \nTitle: TAND State of the State & Delegate’s Report \n  \nObjectives:  To update the membership on legislative changes affecting the dietetic profession at the state and national level.

DESCRIPTION:Please join us as we host Madden Wilson\, RD\, LD\, CNSC on Thursday\, February 25\, from 3:00-4:00p EST \nBio: Madden Wilson is a Registered Dietitian and Certified Nutrition Support Clinician at GI For Kids.  She initially became interested in nutrition support while working as an inpatient clinical dietitian at an acute-care hospital.  For the past 2 years\, however\, Madden has been working as an outpatient RD in a pediatric setting.  She primarily works with GI patients\, but also sees children and young adults with a variety of nutrition concerns. It is in this setting that she has become more familiar and passionate about helping patients and families use blenderized tube feeding formulas for supplemental and sole source nutrition. \nTitle: Blenderized Diets for the Pediatric Patient and Beyond \nObjectives: \n– To identity patients appropriate for blenderized diets \n– To become familiar with recommending commercial and home-made blenderized diets \n– Learn how to create blenderized diet recipes \n– Discuss adequacy of nutrition and food safety provided with blenderized diet \n– Touch on the role of the microbiome in GI health
